When I think of caramel I think Of caramello bars and ice cream sundaes and tastiness. It appears to me like it would be something difficult to make because of the colour and the thickness but it wasn’t until Eilish and I decided we would say yes to it that I realised there was only three ingredients sugar, cold water and hot water. There still is a real science to it which took us a bit to figure but with the guidance of Darina Allen’s Ballymaloe Cookery Course we got there in the end.
