I love having quesadillas at Mexican restaurants. I have a fair idea of what goes into them but have never made them. We thought we would say yes to making them using ingredients like spring onions, jalapeños and chillis just because we had them in the fridge. Along with learning how to make quesadillas I wanted to encourage people to use what they have in the house in their quesadilla rather than following a very specific recipe. I’m so glad I said yes to it and so glad Eilish did too.
